Зеленчукови антипасти


  • 300 g broccoli florets
  • 30 g dried tomatoes
  • ½ squash
  • 30 g olives
  • 1 roasted pepper
  • 15 g ground walnuts or almonds
  • 50 g cheese
  • 5-6 leaves fresh basil
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • salt

Cut the zucchini into thin crescents, bake or grill. Salt and marinate with lemon juice and little olive oil.

Boil 1 liter water and add 1 tbsp salt. Add the broccoli and blanch for 4 min. Transfer to ice water for about two minutes, drain and set aside. Soak dried tomatoes with water from the broccoli for about 15 minutes.

Cut the cheese into cubes 1 cm in size, dip them in a dressing of olive oil and lemon juice and marinate them with the ground nuts.

In a large bowl or clean cutting board arrange blanched broccoli, zucchini, cheese and pepper. Garnish with olives and basil and remaining dressing. Enjoy your meal!
