Mini frittatas


  • 4 servings
  • 4 eggs
  • 2 tbsp cottage cheese
  • ¼ tsp salt
  • Pinch of black pepper
  • 3-4 slices prosciutto ham, cut into strips
  • 1/4 cup low fat cheese, grated
  • 1 tbsp parsley, finely chopped

In a medium sized mixing bowl mix the eggs, mascarpone cheese, salt and pepper. Use an electric whisk until the mixture is smooth.

Add the grated cheese, prosciutto ham and parsley and stir it into the mixture.

Pour the mixture into a muffin tray (6 muffins). Fill the compartments almost to the top.

Bake in a preheated oven at 180°C for about 20-25 minutes or until the tops of the frittatas turn golden.

Serve them straight away or enjoy them cold at a later date.
