Италианска салата с киноа и домати


  • 1 serving
  • 100 g quinoa (cooked 150 g.)
  • 1 fresh peeled tomatoe
  • 20 g dried tomatoes
  • 100 g zucchini
  • ½ cup green seasoning (mix of parsley, dill, basil, mint)
  • 1 tbsp olive oil
  • 50 g diced cheese
  • lemon juice - to taste
  • salt and pepper

Soak 1 cup quinoa with 2 cups of hot water for about 20-25 minutes. Drain and rinse with cold water. Boil 2 cups of water and add the soaked quinoa Simmer for 12-15 minutes.

Drain, add salt and a little lemon juice if desired. Set aside. Boiled quinoa can be stored in the refrigerator 3-5 days

Soak dried tomatoes in hot water until tender (about 10 minutes).

Remove seeds and chop the fresh tomato into cubes. Cut the dried tomatoes the same way. Cut the zucchini pieces into similar sizes. Place quinoa in a bow and add all vegetable, spices and cheese. Season with salt, pepper, olive oil and lemon juice.
